Recipe: Oatmeal Pancakes

Oatmeal pancakes have become a staple weekend food at our house so I wanted to share the recipe with you. These pancakes are super hearty and healthy and so delicious, and most importantly they are very baby and kid-friendly! We don’t even like eating regular pancakes anymore. These pancakes have enough flavour on their own that the baby enjoys eating them plain as a finger food, or with a bit of apple sauce on top. I personally think apple sauce and real maple syrup are essential toppings, and to make it even healthier sometimes we also pile on the canned peaches, bananas, and berries. I always make this exact recipe because when I’ve tried doubling or halving the recipe it doesn’t turn out right . It makes too much for our small family, so I keep the extra batter in a sealed container in the fridge for up to 2 days. It makes a great quick snack or supper for the children!

I always make regular sized and smaller sized ones for Sienna. These pancakes take quite a bit longer to cook than regular pancakes, so 2 frying pans cuts down on time

Oatmeal Pancakes

Ingredients:

1 1/2 cups large flake rolled oats

2 cups milk

1/2 cup whole wheat flour

1/2 cup all purpose flour

1 tbsp brown sugar

1 tbsp baking powder

1 tsp salt

2 eggs, beaten

1/4 cup melted butter

Directions:

In a large mixing bowl, combine rolled oats and milk, let stand 5 minutes. Stir together flours, baking powder, salt, and a bit of cinnamon. Add dry ingredients, eggs and melted butter to oats, stirring until combined. Pour 1/2 cup batter for each pancake onto a hot, lightly greased griddle. Cook each pancake until edges become dry and surface is covered with bubbles. Turn and cook second side until golden brown. Makes 16-18 pancakes.
